Happy Gut Mango Almond Chia Pudding

Meal prepping breakfast for the week on a Sunday afternoon has been a lifesaver in our household - especially when you can just mix and leave overnight. I usually make this using a smoothie and just add the chia seeds in after - it’s like a chia smoothie!

INGREDIENTS - Serves 6

1 x cup of frozen mango

3 x heaped Tbs of organic greek yoghurt - Jalna or Barambah brands

2 x 30g scoops of protein powder - I use coles unflavoured faba bean powder

1/4 cup almonds

3 dates - can be dried or medijool

1 carton of Pure Harvest Cocoquench

1 cup of filtered water

1/2 cup of chia seeds

Filtered water

METHOD

Add all ingredients (except the chia seeds and 1 carton of nut milk) to a blender & whizz

Once blended, add to a large bowl

Add 1/2 cup of the chia seeds + 1 carton of Cocoquench

Mix consistently for a few minutes until all the chia is mixed thoroughly

Add to the fridge overnight to set

The next day - add into glass jars or containers

ADDITIONAL TOPPINGS

Fruit - Banana, berries, kiwifruit etc

Gluten free muesli or granola

Toasted coconut

Paleo mix - Aldi
