Anti-inflammatory Fish Curry

Ingredients.

  • 400 ml full-fat coconut milk.

  • 1 tsp turmeric

  • 1 tsp fenugreek seeds

  • 1 tsp ground coriander

  • 1 tsp cumin

  • 1 brown onion diced

  • 2-4 garlic cloves (preference) chopped or minced

  • 600 g fish fillets.

  • 1 punnet of cherry tomatoes

  • 1 cup chopped broccoli

  • 1 cup chopped green beans

  • 1 chilli


Method.

  1. On medium heat, add olive oil to the pan

  2. Add chopped onions and stir until yellow

  3. Add all the spices together + the garlic + chilli - stir

  4. Add the broccoli, cherry toms, beans and stir for 5 minutes

  5. Add the coconut milk - stir

  6. Add the fish fillets, and cook for another 10 mins with the lid on
