Anti-inflammatory Fish Curry
Ingredients.
400 ml full-fat coconut milk.
1 tsp turmeric
1 tsp fenugreek seeds
1 tsp ground coriander
1 tsp cumin
1 brown onion diced
2-4 garlic cloves (preference) chopped or minced
600 g fish fillets.
1 punnet of cherry tomatoes
1 cup chopped broccoli
1 cup chopped green beans
1 chilli
Method.
On medium heat, add olive oil to the pan
Add chopped onions and stir until yellow
Add all the spices together + the garlic + chilli - stir
Add the broccoli, cherry toms, beans and stir for 5 minutes
Add the coconut milk - stir
Add the fish fillets, and cook for another 10 mins with the lid on
